Hot Dog Cornbread Casserole

Have some left over hot dogs? No problem! This is the perfect recipe to try out.

Ingredients:

2 eggs

¾ cup milk

2 (250g) packs corn muffin mix

1/8 tsp. cayenne pepper

4-5 hot dogs, cut in 1cm slices (hot dogs can be grilled or fresh from the pack)

Procedure:

Preheat oven to 190°C.

Mix corn muffin mix, eggs, milk and cayenne pepper in a large bowl. Add the hot dogs.

Coat a 20cm square baking dish with choice of cooking spray. Pour in hot dog mixture.

Bake for 25-30 minutes. To determine if it’s cooked, you may insert a toothpick in the centre. If it comes out dry, then it’s good to go.

Allow it to cool, slice and enjoy.

Hot Dog Pizza

Who doesn’t like pizza? For this recipe, two all-time favourites come together to make a fantastic snack.

Ingredients:

¼ cup mayonnaise

1 (350g) can refrigerated buttermilk biscuits

1 ¼ cups mozzarella cheese, shredded (divided into ¾ and ½ cups)

¼ tsp. garlic powder

3 hot dogs, sliced

Procedure:

Preheat oven to 204°C.

Separate biscuits and on lightly greased baking sheets, press each one into a 10-cm circle.

Mix garlic powder and mayonnaise and brush over biscuit rounds.

Sprinkle the ¾ cup of cheese over the mayonnaise mixture and finally add hot dog slices on top.

Bake for 5 minutes then sprinkle the other ½ cup of cheese on top. Bake for another 5 minutes or until biscuit rounds become light brown and cheese melts.

Serve and dig in!

Tortilla Dogs

Ingredients:

1 (30g) pack dry taco seasoning mix

700g ground beef

8 (15-20cm) flour tortillas

¾ cup water

8 hot dogs (or about 500g)

1 cup (or 115g) shredded cheese

Procedure:

In a frying pan, sauté ground beef for 4-5 minutes over medium-high heat. Add water and taco seasoning. Bring to a boil.

Reduce the heat to medium then cook for another 12-15 minutes. Stir occasionally.

In another frying pan, fry hot dogs over medium heat. Turn hot dogs frequently.

Divide the mixture evenly and pour on each tortilla. Sprinkle each one with cheese and top with a hot dog. Roll the tortilla around the dog and place it seam down on a plate.

Serve and grab a bite.
